redhat/configs: automotive: enable I2C_IMX and dependencies

The NXP S32G3 family uses the compatibles 'nxp,s32g[23]-i2c' for its I2C
controllers, which requires I2C_IMX. Enable this Kconfig as a module by
removing the automotive-specific value and falling back to the value set
in redhat/configs/common.

The bus uses clocks that are controlled by firmware over SCMI (see
s32g3.dtsi), so change the automotive definition for COMMON_CLK_SCMI
from =n to =y by removing the automotive setting as well.
