Update linux kernel to v6.1 version

Hi @razvand @sergiu121,

I've created a new branch https://github.com/linux-kernel-labs/linux/tree/lk-labs-v6.1 with all patches rebased to v6.1

It looks like there is a problem with building the documentation though.

Maybe someone has a clue about it.

As discussed on our last meeting, for 2023 spring semester will still use the master branch based on 5.10 kernel but in parallel we will have a more up to date branch following v6.1.
